A riff on Lucas Sin’s Chilled Soba Noodle Salad with Yuzu Dressing - this vibrant summer dish is as easy as they come! Slice in smoked tofu or shredded rotisserie chicken for added lean protein.
Ingredients
- Combine the sauce ingredients and mix until smooth
- Core the cucumber and place on paper towel to dry
- Peel and thinly slice the carrot
- Remove the poblano seeds and thinly slice
- Wash and shred the lettuce and endive leaves
- Thinly slice the cucumber
- Cook the noodles according to package instructions - once cooked, drain and rinse under icy water until cool
- Mix ½ the sauce with the noodles until thoroughly coated
- Portion the noodles into bowls and top with the prepared vegetables and garnish
- Pour on the remaining sauce and mix well
