Chilled Yuzu Soba

A riff on Lucas Sin’s Chilled Soba Noodle Salad with Yuzu Dressing - this vibrant summer dish is as easy as they come! Slice in smoked tofu or shredded rotisserie chicken for added lean protein.

Ingredients

SOBA:

  • 180g soba noodles (2 bundles)
  • 4 - 6 cherry tomatoes
  • 4 - 6 curled green lettuce leaves
  • 2 scallions
  • 1 small carrot
  • 1 small cucumber
  • ½ endive
  • ½ poblano pepper


SAUCE:

  • 4 tbsp Tocha Yuzu
  • 1 tbsp pure sesame paste
  • 1 tsp rice vinegar
  • 1 tsp soy sauce


GARNISH:

  • Sesame seeds
  • Combine the sauce ingredients and mix until smooth
  • Core the cucumber and place on paper towel to dry
  • Peel and thinly slice the carrot
  • Remove the poblano seeds and thinly slice
  • Wash and shred the lettuce and endive leaves
  • Thinly slice the cucumber
  • Cook the noodles according to package instructions - once cooked, drain and rinse under icy water until cool
  • Mix ½ the sauce with the noodles until thoroughly coated
  • Portion the noodles into bowls and top with the prepared vegetables and garnish
  • Pour on the remaining sauce and mix well
